I am more comfortable changing a basic recipe with soups, stews, or one-dish meals, not so much with "baking" - not nearly so comfortable.
Realizing I don't have "loaf" pans, I had to use a glass casserole dish, let them cool, cut and store them, so I can wash the dang casserole dish and use it again. What's next? I have some zucchini that needs used and a friend has shared a recipe for a "Zucchini Casserole". I'm on board with that since I'm not a huge fan of zucchini, nor do I know what to do with it. So, that's my next culinary concoction to attempt today.
In spite of overbaking just a tad, the Zucchini Casserole was yummy. And, yes, I would make it again. I haven't baked in such a long time, and my kitchen is small and inefficient so I am forced to clean up after myself - during and in between individual dishes. Those two dishes took a few more hours than I anticipated. No time for any more culinary experimentation today.
